One of my favorite summer food obsessions is an avocado! So here are my Stuffed Avocados, perfect for lunch and so easy to make. First, slice your avocado in half and remove the pit. Second, sprinkle the avocado halves with some salt/pepper and place in the oven for about 5-7 minutes. Third, take out your avocados out of the oven and its time to top! I topped mine with mild salsa, some Siracha, and shredded Monterey Jack cheese. Fourth, once topped to your liking, place them back in the oven for another 5-7 minutes (mainly until cheese is fully melted). Once they are all done take them out of the oven, grab a spoon, and they are ready to eat! Add a dollop of sour cream to top them off if you’d like as well!
- 1 Avocado
- A pinch of salt and pepper
- About a 1 cup of salsa
- About 2 teaspoons of Siracha sauce
- About 1/2 a cup of Monterey Jack cheese
- (Optional) About 1/2 a cup of sour cream
